Why does this change?

Stem-changing
The vowel in the stem changes in most forms (e.g. e→ie, o→ue) — but the endings themselves stay completely regular.
Reflexive
The subject does the action to itself, so the verb pairs with a reflexive pronoun (me, te, se, nos, se) — e.g. levantarse, "to get (oneself) up."
  • e→i in the present tense (except nosotros)
  • gerund: vistiendo

e→i in the present (see stemChanges), carried through to the preterite third persons and gerund.
